Serves 2

Few dishes are as easy—or delicious—as fresh fish paired with a crispy coating. Use the same baking method described below for the recipes on the facing page.

4 Tablespoons coarse fresh breadcrumbs
1 Tablespoon chopped fresh tarragon
1/2 teaspoon grated lemon zest
2 teaspoons melted butter
Salt and freshly ground black pepper
2 cod fillets, about 6 ounces each and 1 inch thick
1/2 teaspoon Dijon mustard

Recipe -- Cheddar Cheese Dressing

Makes about 1 1/4 cups

Ingredients

* 2 tablespoons extra-virgin olive oil
* 1 tablespoon balsamic or red-wine vinegar
* 1 tablespoon lemon juice
* 1 1/2 teaspoons Dijon mustard
* 1 large or 2 small cloves garlic, minced
* 1/2 cup Cabot Sour Cream
* 2 tablespoons mayonnaise
* 1 cup grated Cabot Extra Sharp Cheddar
* 2 green onions, finely chopped
* 1 teaspoon salt, preferably sea or kosher
* Freshly ground black pepper to taste
