Makes 1 1/2 cups.

2 tablespoons butter
1/2 cup firmly packed brown sugar
1/2 medium-size sweet onion, chopped
1 jalapeno pepper, seeded and chopped
2 medium pears, peeled and chopped
1 teaspoon salt
2 tablespoons balsamic vinegar
2 tablespoons lemon juice

Recipe -- Kale and Apple Soup

Serves 4
Provides 1 1/2 fruit and vegetable servings per person


2 cups low-sodium vegetable broth
1 pound kale, carefully washed and stems removed (4 cups)
1/4 teaspoon salt
1/4 teaspoon ground cumin
1 teaspoon brown sugar
1 small Granny Smith apple, cored and chopped (1 cup)
1/2 cup low-fat plain yogurt
